Jackson Belleville is a farmer and the produce supplier for the Independence Inn and later on the Dragonfly Inn. He would frequently get into fights about the quality of the vegetables with Sookie. Sookie asks him out on a date in 1.11. Their first date is an awkward double date with Lorelai and Jackson's cousin Rune, but once they ditch Rune and Lorelai, they have a good time together (1.12). Jackson proposes to Sookie during the "Stars Hollow Bid on a Basket Fundraiser", and they get married at the Independence Inn in the Season 2 finale. They have two children, Davey (born in Season 4) and Martha (born in Season 5/6), and during Season 7 Sookie is pregnant with their third child.

In Season 5, Jackson defeats Taylor Doose to become Town Selectman (5.04). However, he dislikes being Town Selectman, and eventually Taylor takes over the position.
